happy april fool's day!

or not...hahaha! it was a waste of a day/gong show for me. which resulted in a less than great breakfast and lunch. I had to wait at the DMV again, all damn day, and forgot to bring snacks. by the time I got home, I was starving and grabbed the first low-carb friendly things I found.

breakfast:
sausage & egg mcmuffin on a coconut flour muffin

lunch:
nut bar
yogurt & granola

dinner:
meatloaf
broccoli
butter
homemade mounds bar

snack:
slice of roast beef
coconut milk chocolate pudding

Hey are those the coconut flour muffins from Healthy Indulgences?
I made them this weekend, Hubby LOVED them, I'm not so sure about them. I'm gonna try making them again this weekend without the pepper and garlic in them. I think that is my hang up with them.

I also made the cup cakes....OMG GOOD!!!!! I'm not much of a sweets eater, but these are good.

Anyway, Just wondering... :)

oops NOT cup cakes, I made the brownies....Don't know why I typed cup cakes, I think because I'm watching John & Kate plus 8 on TLC and their kids are all decorating cup cakes....LOL

they are! the english muffin type ones. the recipe is extremely similar to another coconut muffin one that i made before, but the cheese makes the english muffin-esque tunnels. :) I was full for HOURS.
